I'm looking for some fun, fridge-free lunch ideas for elementary school aged kids.

That will take some thinking. I'll be taking notes on any suggestions you get.

I remember my mom putting carrot sticks in a zip lock bag with a single ice cube. The ice cube would keep the carrots cool and moist.

Our new saving grace are the pre-frozen peanut butter sandwiches. They don't have to be refrigerated because they thaw during the day.
Veggies are always good and can go the day nonrefrigerated. (But I think you are wanting TOTALLY fridge-free given your current living arrangements).
So in that case other thoughts...those mini tuna/chicken salad cans that come with crackers and you mix up when you are ready to eat.
We love Fiber-one bars in our house (even Lily) and they are filling.
Peanut butter crackers
Peanut butter and fruit (apples/banana/etc...)
I'll keep thinking and get back to you.
